Sannio Fiano DOC
Our Fiano del Sannio DOC is the most authentic expression of our territory. A complex wine, it gains a well-defined structure and lasting freshness from prolonged ageing on its fine lees.


Vinification & Ageing
Grapes are hand-selected during harvest
Soft, vacuum pressing
Must is cooled to 8°C for 48 hours for settling
Spontaneous fermentation for approximately 30 days at 14°C
Ageing on fine lees in stainless steel tanks for 10 months
Frequent batonnage throughout the 10-month ageing period
Bottle ageing for eight months before release
Strict quality control at every stage.

Grape Variety: Fiano del Sannio DOC
Vineyard: Family-owned, south-facing hillside
Soil: Loamy clay
Cultivation: principles of integrated quality production to preserve biodiversity
Harvest: Hand-picked at optimal ripeness
Production: Limited to only 2,660 bottles
Organoleptic Profile
Appearance: Bright straw yellow with greenish reflections and good consistency
Aroma: Elegant notes of fresh fruit, such as apple and pear, complemented by floral hints of orange blossom, hawthorn, and aromatic herbs
Taste: An exuberant freshness on the palate with marked acidity and sapidity, leading to a pleasing persistence
Structure: Complex, thanks to extended ageing on fine lees
Finish: Balanced, harmonious, and elegantly persistent
